As the chill of winter wraps around us, there’s nothing quite like retreating to the warmth of home, a soft blanket, and something steaming and delicious to ward off the cold. It’s the season for hot cider, crackling fires, and comforting dishes that nourish both body and soul. When the temperature dips, my go-to is a warm, hearty bowl of rice porridge—the kind of dish that feels like a hug in a bowl.

But the magic of a comforting meal starts with quality ingredients. This is where thoughtful farmers, like those at Castor River Farms, make all the difference. Their premium rice is the foundation of this recipe, lending its creamy texture and natural sweetness to the dish. Today, I’m sharing a recipe that elevates the humble bowl of rice porridge to something truly special: Chili Crisp Rice Porridge with Jammy Egg and Crispy Prosciutto. It’s the perfect blend of rich, spicy, and savory, offering a balance of textures that’s endlessly satisfying. Let’s dive into the recipe, and here’s to making the most of cozy days and the good ingredients that make them so memorable.

Cozy Chili Crisp Rice Porridge with Jammy Egg and Crispy Prosciutto

Rice Porridge

  • 7 cups chicken or vegetable stock
  • 1 cup Castor River Farms white rice
  • 1/2 teaspoon kosher or sea salt, plus more for seasoning
  • 1-inch knob of ginger, peeled and sliced thin
  • Sliced scallions, for garnish
  • Sesame seed oil or soy sauce, for serving (optional)

Directions

  1. In a large pot, add stock, rice, salt, and ginger. Bring the mixture to a boil, then reduce the heat to a low simmer. Stir occasionally so that the rice doesn’t clump or stick at the bottom.
  2. Simmer the congee for about 1 hour or until the congee is thickened and creamy. Add salt to taste.
  3. Serve the congee hot with runny egg, chili crisp, scallions, sesame seed oil, and soy sauce.

Crispy Prosciutto

  • 12 pieces thinly-sliced prosciutto

Instructions

  1. Preheat the oven to 400˚F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Add prosciutto slices to the baking sheet, making sure they do not overlap.
  3. Bake for 9 to 12 minutes, until the slices begin to shrivel and turn golden. Be sure to keep a close eye on it because the slices can burn quickly.
  4. Remove from oven and let cool on the pan for 5 to 10 minutes. The slices will continue to crisp up as they cool!
  5. Serve as desired
