Cozy Chili Crisp Rice Porridge with Jammy Egg and Crispy Prosciutto
Rice Porridge
- 7 cups chicken or vegetable stock
- 1 cup Castor River Farms white rice
- 1/2 teaspoon kosher or sea salt, plus more for seasoning
- 1-inch knob of ginger, peeled and sliced thin
- Sliced scallions, for garnish
- Sesame seed oil or soy sauce, for serving (optional)
Directions
- In a large pot, add stock, rice, salt, and ginger. Bring the mixture to a boil, then reduce the heat to a low simmer. Stir occasionally so that the rice doesn’t clump or stick at the bottom.
- Simmer the congee for about 1 hour or until the congee is thickened and creamy. Add salt to taste.
- Serve the congee hot with runny egg, chili crisp, scallions, sesame seed oil, and soy sauce.
Crispy Prosciutto
- 12 pieces thinly-sliced prosciutto
Instructions
- Preheat the oven to 400˚F. Line a baking sheet with parchment paper or a silicone baking mat.
- Add prosciutto slices to the baking sheet, making sure they do not overlap.
- Bake for 9 to 12 minutes, until the slices begin to shrivel and turn golden. Be sure to keep a close eye on it because the slices can burn quickly.
- Remove from oven and let cool on the pan for 5 to 10 minutes. The slices will continue to crisp up as they cool!
- Serve as desired
