HAPPY CINCO DE MAYO & TACO TUESDAY!!!

Can you believe it? Cinco de Mayo and taco Tuesday! The odds were in our favor I guess! Too bad we are still trying to social distance. Because I have a feeling today would be one hell of a party! What better way to celebrate than with a margarita, duh!!! But today requires a special margarita… a Cotton Candy Rhubarb Margarita is in order! And it’s a good think I got you covered! Now go bust our your cotton candy machine and start drinking! Oh, whats that? You don’t have a Cotton Candy machine? What world are you living in? Doesn’t everyone have one? No? Well this might be why my daughter was so popular pre-covid then! LOL!

Either way if you have a cotton candy machine, thanks for being weird with me. If you don’t well you can at least find some at the grocery store or gas stations I’m sure!

Cotton Candy Rhubarb Margarita

Ingredients:

Rhubarb Syrup

  • 12 ounces chopped Rhubarb

  • 1 cup water

  • 1 cup white sugar

Margarita

  • 2 ounces lime juice

  • 2 ounces rhubarb syrup

  • 1.5 ounce tequilla

  • 1 ounce orange liqueur, such as Grand Marnier

  • Cotton Candy

  • Lime slices

Rhubarb Syrup:

  1. In a medium size sauce pot combine the rhubarb, water and sugar. Bring to a boil and let cook for about 10 minutes. Strain out the rhubarb and reserve the liquid. Place the syrup in a glass container and let cool to room temperature before putting the syrup into the refrigerator.

Margarita:

  1. In a shaker combine the lime juice, rhubarb syrup, tequilla and orange liqueur. Shake with some ice, then pour into serving cup. Top with cotton candy and lime slices!
