French Toast Rice Pudding With Fried Croissant Chips might just become your favorite classic cozy dessert ever! Like EVER! No joke, this simple-to-make recipe is one of my favorites to make and eat. It tastes just like your favorite cinnamon toast crunch cereal as a kid, but this adult version is soooo much better. The addition of crispy sugary-fired croissant chips takes this dessert to new levels. I can’t rave about this enough! But this classic does owe the majority of the flavor to Castor River Farms Rice. Now I know your probably thinking rice is rice, but NO, its not! Castor River Farms Rice is like eating the truffles of the rice world. All of their dedication and hard work to make the most nutritious rice makes the flavor so much more intense and delicious. So believe me when I say, I can know longer eat no name brand rice. So get into your self care era, buy some Castor River Farms Rice, make this rice pudding recipe, get in your favorite pajamas, put on your face mask, put Bridgerton on (cause we all will be watching repeats until 2026 now), cozy up with a blanket, and enjoy every bite of this amazing dessert (or breakfast, or dinner.. who are we kidding).

French Toast Rice Pudding With Fried Croissant Chips

Ingredients:

1 ½ cups cold water

¾ cup uncooked white rice

2 cups milk

⅓ cup brown sugar sugar

1 vanilla bean, seeded

¼ tsp salt

1 large egg, beaten

1 tbsp butter

1 tsp cinnamon, ground

1/2 tsp cardamom, ground

Directions:

  1. Pour the water into a saucepan and bring to a boil over medium-high heat. Once the water is boiling stir in the rice. Reduce the heat to low, cover, and let simmer until the rice is tender and the water has been absorbed about 15-20 minutes.
  2. Add the milk, sugar, vanilla bean seeds, and salt, stir to mix well. Cover the pot and set the heat to medium, be sure to stir often, until the rice is thick and creamy. 
  3. Once the rice is creamy add the beaten egg, butter, cinnamon, and cardamom. Stir to mix well. Remove the pot from the heat and let sit for about 2-3 minutes before serving.

Fried Croissant Chips

Ingredients:

2 baked croissants

1/2 cup avocado oil

2 tbsp white sugar

Directions:

  1. Slice the croissants about 1/4 inch width-wise to get round pieces of croissants, I like to use a serrated knife so it does not crush the croissant.
  2. In a frying pan set over medium-high heat, add the avocado oil. 
  3. Once the oil is hot and starting to ripple, add about 4-6 pieces of croissant rounds to the pan. Cook the croissants until golden brown on one side about 45 seconds to 1 minute max. Then flip the croissants over and repeat on the other side.
  4. Once the chips are golden brown on both sides, remove them from the pan and immediately sprinkle them with the white sugar.
  5. Repeat this process with the remaining croissant rounds.

Serve the rice pudding warm, topped with the croissant chips. I also like to add fresh berries and a drizzle of honey.
